mmmm… Paleo Pancakes
  • Thanks to the RX Girls from Crossfit Miami, I went on a mission last week to make Brinner. You may be wondering, what the heck is Brinner. I can assure you that its one of the best ideas ever imagined- having breakfast for dinner. If you don’t believe me check out the link below to see just how much someone can love their Brinner.

    In my pre-paleo life, I was the master of breakfast delicacies . . . or at least I like to think I was. Pancakes, French Toast, Waffles… I loved them all. Not to mention syrup and cinnamon sugar (sorry- “crack” addict relapse for a second).

    I don’t think Marc would argue with my self-imposed title of “breakfast master”, seeing as how during our first few months of dating he requested that I make him French toast roughly 14 times. Yes… those were also his pre-paleo days . . .

    Seeing as how those delightful little syrup-covered-bites-of-heaven are definitely ‘non-paleo’, I have been avoiding them for months- until now! Marc sent me the link to the RX Girls recipe blog (which I recommend you take a look at- http://rxgirlsmiami.com/category/recipes/) where I saw the recipe for Paleo Pancakes.

    I know… many people have tried to achieve the Holy Grail of Paleo recipes and most have failed. The most common complaints I have heard about Paleo Pancakes include: sogginess, mushiness, falling apart or a lack of taste. But I am here today to tell you- It doesn’t have to be that way!

    I went to the store, bought my ingredients, and invited my designated taste tester over for “brinner.” To my surprise the pancakes were easily prepared, effortless to flip and fluffy! I topped them with a drizzle of Agave and some fruit. Our brinner side dish was bacon and we even had a little coffee to top it all off.


    Now- let me make a note here for those of you who are following strict paleo. Items such as bacon and agave nectar, and coffee are allowed on a modern paleo diet but if you are trying to lose weight, I would recommend skipping these items.

    Finally I presented my cute little fake pancakes to Marc who said, “Wow! These actually look real!” Upon tasting we both noted a slight coconut flavor that was quickly forgotten when our bites were paired with fruit. Marc’s final note, “These are good. And the little bit of Agave on top makes it feel like syrup!” Perfect! Because that’s why I write this thing- you taste test and we narrow down the best recipes. Now take it easy on the sweets Duchene!

    Paleo Pancakes
    (F.Y.I. I made a double batch and it was enough for marc and I with a little left over)

    Ingredients:
    3 eggs
    3 tablespoons coconut milk (full not light)
    1 1/2 teaspoons light agave nectar or sub with raw honey
    1/4 teaspoon sea salt
    4 tablespoons coconut flour

    Directions:
    1. Using a wire whisk, mix together: eggs, coconut milk, agave nectar, and sea salt.
    2. Continue to whisk and add in the coconut flour.
    3. In a skillet on a medium flame heat: grape seed oil, pure butter, or coconut oil
    (I wouldn’t recommend the coconut oil though unless you LOVE that flavor. The pancakes will already have a slight coconut flavor)
    4. Spoon 2-3 tablespoons of batter onto skillet making pancakes about 3-4 inches in diameter.
    (Maintain a low-medium heat- if you cook pancakes on too high of heat they tend to burn on the outside and remain somewhat raw in the middle)
    5. Using the bottom of a spoon lightly form the batter into a pancake form.
    6. When the edges begin to turn a golden brown and the pancake slides on the pan when slightly pushed it is ready to be flipped
    (BTW- These pancakes will not bubble so don’t wait around for the traditional pancake flipping notice)
    7. When pancakes are done, plate and serve with either real/raw maple syrup, hot nut butter (like almond butter), fruit slices, or a little bit of agave nectar.

    Those pancakes look great, Amy! I’ve heard it takes a little skill and maybe some trial and error to get these kinds of pancakes just right, but it looks like you got it perfect the first time :)
