Paleo Chicken Wings
  • As some of you may have heard, my CF coach/boyfriend and I recently became engaged! I guess from now on I will be calling him my CF coach/ fiancée.

    I guess what this also means is that I will be forced to sit in my kitchen and experiment with everything gluten free, grain free, dairy free etc. for the rest of my life… Just kidding Marc! I know I wouldn’t have to sit in the kitchen- I could stand if I wanted to, Haha!

    Anyway, since Marc is now going to be a part of the family, he needed to know something about my mother and brother. Marc, both of them have a seriously unhealthy and strangely obsessive love for chicken wings.

    It’s true, of anything you could order in the world, they both love a good fried buffalo wing with just the right amount of sauce and a good kick. I can almost guarantee that if you have been to a restaurant with wings on the menu, that they have probably been there, tried them, and can quickly tell you the pros and cons of the taste and texture of that restaurant’s wings. I can also guarantee that they have tried every flavor of wings available at Wing Stop and Buffalo Wild Wings.

    Unlike the rest of my family, though, I don’t obsess over wings. Don’t get me wrong, I LIKE THEM, but not to the point where my mother would pick me up early from school and say I had a “doctor’s appointment” while instead taking me to Applebee’s for a 20 piece order (my mother and brother used to do this all the time- so not fair!) But like I said, I do enjoy a good order of wings and I couldn’t help myself from trying to fulfill the craving when attempting to stay paleo. I decided to try some Google magic and find myself a paleo chicken wings recipe, and success! I found a recipe that seemed simple and delicious enough to fix the problem a website called www.paleo-recipes.com , they had actually contacted me several months ago to get CFEP listed as one of their “friends” on their website for affiliates that provide Paleo Recipes and such (see here: we are #30 on the list).

    So, I hit up my bag of almond flour and went a little crazy with my collection of spices as the recipe said to. The smell of the coating for the wings was so good, I couldn’t wait to get these into the oven and to once again make Marc taste test a new recipe. Turns out, they came out really good! They were crispy & tasty but also healthy- exactly what I was going for! On a side not, while the coating provided some good flavor I couldn’t help but crave a little extra heat. I added a bit of Frank’s Red Hot Wing Sauce, a paleo-friendly addition made primarily of distilled vinegar and cayenne peppers.

    Of course, I had to get Marc’s reaction. His comments, “Tell them I said: Who needs Buffalo when you got paleo wild wings?!” And yes, I will have to live with his ridiculosity forever… but at least the food will be good. Definitely give this recipe a try and Marc adds, “Definitely, use Frank’s Red Hot- that was perfect.”

    PALEO  CHICKEN WINGS

    Ingredients:

    • 1 cup almond flour
    • 1 teaspoon onion powder
    • 1/2 teaspoon garlic powder
    • 1/2 teaspoon thyme
    • 1/2 teaspoon paprika powder
    • 1/2 teaspoon sage
    • 1/2 teaspoon nutmeg
    • 2 teaspoons lemon pepper
    • 1/4 teaspoon cayenne pepper
    • 1/4 teaspoon black pepper
    • 1 package of fresh chicken wings- found with the other fresh chicken at your local grocer
    • olive oil (or grape seed oil) spray

    Directions:

    1)       Preheat oven to 220°C and line 2 baking trays with foil.

    2)      Combine flour, onion powder, garlic powder ,paprika powder, peppers and herbs in a large plastic bag- I found that using the bag didn’t really coat the wings evenly. My suggestion would be to combine all ingredients in a large mixing bowl.

    3)      Spray the chicken wings with the oil, and dip each wing in the almond flour mixture until evenly coated (or if you opted for the bag, place wings in the bag and shake evenly to coat).

    4)      Place onto prepared baking trays. Repeat with remaining ingredients.

    5)      Spray chicken with oil again. Bake for 25 to 35 minutes or until crisp and cooked through.

    6)      Add your *optional* hot sauce of choice and serve with a salad. Enjoy!

  • Amy, this is a really funny and insightful post. The recipe sounds good too. I don’t know if anyone has tried Track One wings but their double dipped sauce is a combination of Franks Hot Sauce and Honey. (Don’t sue me for telling) I personally think Franks Hot Sauce is great on wings. Where do you find the flour you mentioned? Anyway thanks for the info and just in time for the National Championship game next Monday. Now get back in the kitchen women.(j/k)
